This healthier re-do of an all-American classic is perfect for an upcoming family dinner. If there’s leftovers, they’re great to freeze and reheat for a future meal.

Makes: 4 Servings
Ingredients:
- 2 teaspoons olive oil
- 1 onion, diced
- 1 sweet red pepper, seeds removed and finely chopped
- 1 ½ pounds ground turkey, preferably breast meat only (Vegetarians: Substitute 1 cup crumbled tofu and 2 cups canned, no-salt- added kidney beans, drained and rinsed, mashed with a tablespoon olive oil with the back of a fork or in food processor. But do not purée.)
- 1 ½ cups marinara sauce, preferably with no more than 500 mg sodium per 1⁄2 cup
- 2 tablespoons apple cider vinegar
- ¼ teaspoon cinnamon
- ½ teaspoon salt
- 4 whole grain hamburger buns, approximately 110 calories each
Instructions:
- Heat a large skillet over medium heat and coat with oil. Add onion and sweet pepper. Cook 3 minutes, stirring often.
- Add turkey (or beans) and cook, stirring often, until browned, about 3 minutes.
- Add marinara sauce, vinegar, cinnamon and salt. Bring to a simmer and cook 5 minutes.
- Divide mixture evenly across 4 sliced, open buns and serve.
