Ingredients
- 2 teaspoons olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 pound lean ground beef, preferably 95 percent lean (Vegetarians: Substitute 14 to 16 ounces crumbled firm tofu)
- 1/2 teaspoon salt
- Freshly ground black pepper
- 1/2 teaspoon chopped fresh oregano (or ¼ teaspoon dried oregano)
- 3 cups fresh or canned chopped tomatoes
- 2 tablespoons tomato paste
- 5 cups cooked 100 percent whole wheat, brown rice, quinoa or whole grain spaghetti (7 ½ ounces uncooked)
- 1/4 cup grated Parmesan
Instructions
- Heat a large heavy bottom skillet over medium heat.
- Add oil, onion and garlic and cook, stirring often, for 3 minutes.
- Add beef (or tofu), salt and pepper to taste and cook until browned, stirring often, about 5 minutes.
- Add oregano, tomato and tomato paste to beef mixture.
- Simmer for 5 minutes. Add spaghetti and combine thoroughly.
- Top each serving with 1 tablespoon grated Parmesan and serve.
