Rise and shine! You won't have any trouble getting out of bed when these pancakes are on the table.

Makes: 4 servings
Ingredients:
- ¾ cup whole wheat flour
- ⅓ cup all-purpose flour
- ⅓ cup wheat bran
- ½ teaspoon baking soda
- 2 eggs, beaten
- 1 ¼ cups buttermilk
- ¼ teaspoon salt
- 2 tablespoons olive oil
- Cooking oil spray
Garnish:
- 2 cups berries or chopped fresh fruit
- 2 tablespoons plus 2 teaspoons maple syrup (2 teaspoons per serving)
Instructions:
- In a large bowl, mix flours, bran, baking soda, eggs, buttermilk, salt and olive oil until just combined.
- Heat a heavy bottom skillet over medium heat.
- Spray skillet with cooking spray and drop a scant 1⁄4 cup of batter at a time onto skillet, making 12 pancakes total (you will have to do this in batches). When bubbles appear on the surface of pancake, approximately 2 minutes, flip, and cook the other side for 2 minutes.
- Garnish with fruit and drizzle with maple syrup before serving.
